Xoriatiki Tomato Soup


  • 4 ripe tomatoes and tight
  • 2 Fiorina peppers
  • 1 large seedless cucumber with peel
  • 1/2 onion, finely chopped
  • 1 clove chopped garlic (optional)
  • 1 ml. P. Vinegar with rosemary and thyme
  • 1 liter of tomato juice
  • salt
  • freshly ground pepper
  • To serve
  • feta crumbs
  • olive slices
  • croutons
  • extra virgin olive oil

How to make?

Peel the tomatoes, remove seeds and finely chop the flesh into small diced. Place them in a bowl.

Remove the stem from the peppers, cut them in half, remove fibers and seeds and chop into diced. Add the tomatoes.

Cut cucumber in half, remove seeds and chop into diced (with peel). Pour materials. Add the onion, garlic and vinegar.

Salt and pepper well and try if required further.

Mix all the ingredients and marinated and download their liquid, for 10. Add the tomato juice.

Mix well all ingredients and chill. Serve cold tomato soup (in transparent bowl) cold and garnish with olives, croutons and feta crumbs.
