Salad With Black-Eyed Beans And Anchovies

  • 250g. black Eyed Peas
  • 1 onion, cut into very thin slices
  • 1 lettuce or aismpergk or mixed
  • 200 grams. round green beans
  • 400 grams. small fresh potatoes in their skins
  • 2 Tbsp.. Olives sliced
  • 8 imiliastes tomatoes (softer) in oil
  • 12 anchovies in oil
  • Two boiled eggs (tight)
  • juice of 1/2 lemon
  • 1 ml. P. Wine vinegar
  • 1/3 cup. olive oil
  • salt
  • freshly ground pepper

How to make?

Boil the potatoes in their skins for 20 to 30 soft. After boil cut them in half.

Boil eyed in plenty of water, to soften, about 40. Drain.

Boil the green beans in salt water for 3 to 4 and the drain (to be al dente, not too cooked).

Wash, drain and chop the salad in salad bowl. Add the black-eyed peas, green beans, cut the potatoes, onion, olives, sun-dried tomatoes, anchovies and eggs cut in four.

In bowl put salt, pepper, vinegar and lemon juice and mix. Add the olive oil and beat with a fork to thicken the vinaigrette. Pour the dressing over the salad.
