Take care to ensure that your butter is salt-free and buttery at room temperature. Make sure your sugar and butter are whipped together very well. How is it prepared?
Take your butter into a deep cabin. Beat with a mixer until creamy consistency is achieved.
Then add the powdered sugar inside and continue stirring until sugar is melted.
Add eggs and bake for a few more minutes, then add lemon juice, lemon rind, and poppy. Mix with a spatula.
Then add the vanilla and baking powder and start adding flour gradually.
Add flour and knead until you get a soft, greasy tissue that does not stick.
Make a long roll over the loaf you have obtained. Make sure that everything is evenly thick. If necessary divide this into two equal parts.
Then wrap it in a stretch film and let it rest in the fridge for about 1 hour.
Take it out and cut it out with a sharp, flat knife to obtain medium-sized rounds.
Transfer your cookies onto the oven tray with oily paper. Bake for about 10 to 12 minutes until the cookies are lightly reddish in a 180 degree oven.
Take it out and let it cool down at room temperature. It will be very thick. Then you can eat with pleasure.
