Penne Amatriciana


  • 500 gr. pence
  • olive oil
  • Two pieces streaky
  • 1 small onion
  • 1 hot pepper
  • 2 c. crushed tomatoes
  • 2 tomatoes, chopped
  • grated cheese
  • a little chopped basil
  • salt
  • freshly ground pepper
  • 125 g. grated mozzarella

How to make?

Chop in the diced pancetta. Heat the olive oil and brown the pancetta. Remove the paper towels. Brown the chopped onion and chilli.

Add the crushed tomatoes. Boil for 6-7 minutes to thicken the sauce. Add the chopped tomatoes, salt and pepper and add the pancetta.

Boil pasta, drain (keep a little of the water) and add to the sauce. If necessary, dilute with a little of the pasta water.
