Muffins With Olives And Wholemeal Flour


  • 3/4 cups. olive oil
  • 2 fl. juice fresh orange
  • 1 min. soda
  • 1 fl. olives chopped – preferably Thassos or Amfissa
  • 3 fl. whole grain flour
  • 3 et seq. baking powder
  • 1 Mr. mint dried
  • 1 dry onion finely chopped
  • pepper freshly ground

How to make?

For salted muffins without eggs, put the baking flour in a bowl. Put the olive oil in another bowl. Spoon the soda into the orange juice. Be careful, because the mixture is inflated and poured! Pour it into olive oil. Stir them with wire. Pour half the flour into the liquids and stir to become a slurry.

Add the olives, onion, mint and pepper. Stir well and add the remaining flour (keep 2 cc flour, do not put it all). Blend the mixture into 12 muffins.

Bake in a well preheated oven at 160 degrees C, in the air, on the middle grill, until they are well bloated, about 20-25 minutes. Allow them to stand for 10 minutes in the mold and then refine them.
