Broccoli Velvet


  • 1. 200 grams broccoli cleaned
  • 2 fresh onions finely chopped
  • 2 ounces of olive oil
  • 1 liter of vegetable broth or water
  • salt
  • freshly ground pepper
  • 4 slices prosciutto for garnish
  • yogurt for serving

How to make?

For Broccoli, warm the olive oil on medium heat and pour in the fresh onions. Leave them for a while until they become transparent for 2-3 ‘.

Divide the broccoli into locusts and cut their stalks into small pieces. Add them to the pot. Cover the ingredients with the broth and simmer for 20 to soften. Then grind them with the stick or the blender and salt pepper. We keep the velvet warm.

On a sheet metal, laid with papers, spread the prosciutto slices. Bake them in the air at 220 o C for 10, to make them crisp. Spread them onto absorbent paper and let them cool down.

We share the velvet in deep dishes and rub with the hands over the prospect. We accompany yoghurt.
