Amatrician Pens (Amatrician)


  • 500 g pennies
  • olive oil
  • 2 Piece Pieces
  • 1 small onion dry
  • 1 hot pepper
  • 2 fl. grated tomatoes
  • 2 tomatoes finely chopped
  • grated cheese
  • a little royal finely chopped
  • salt
  • freshly ground pepper
  • 125 g grated mozzarella

How to make?

We begin the amatriciana pens (amatrician) by finishing the pantagetas first. Heat the olive oil and roast the pancetta. Take it on absorbent paper. Roast the chopped onion and pepper.

Add the grated tomatoes. Boil for 6-7 minutes to thicken the sauce. Add the finely chopped tomatoes, salt and pepper.

Boil the pasta, drain it (keep some of its water) and add it to the sauce. If necessary dilute with some of the pasta water.

Sprinkle the amatriciana pens with cheese and basil chopped.
